Founded by Scott Maitland and Esteban McMahan, it progressed naturally out of the Top of the Hill Brewery (or what became known affectionately to the locals as TOPO) when Scott became acquainted with a local farmer of soft red organic wheat. As this farmer ((Ernest Winslow) was looking for a good home for his organic wheat, Scott saw a great opportunity to create stellar spirits from the best raw ingredients that could be had. And so TOPO Distillery was born.
First, because there is so much depth of character in organic grains, as opposed to grains grown with lots of chemicals and non-organic fertilizers. This character in the grains shines through when fermented and distilled by experts. Your pallet will tell you there is something unusually good going on from the first sip.
Second, because it is good for the environment, which means it is good for the consumer. TOPO is 100% committed to working not only with organic raw materials, but to keeping the organic commitment all the way through to the final stage of production to produce one of the few organic spirits in the country. TOPO is the only Green+ Certified distillery in the country, meaning they take great measures to ensure the building, equipment and products are environmentally sustainable.
Third, because being truly organic means being local, and TOPO sources 100% of their grains, plus whatever of the botanicals possible for the gin, all from local, organic farmers. Now, that’s commitment!
