RANSOM DRY GIN

Description and Flavor Profile: Fashioned after Holland’s renowned malt wine genevers, Ransom Dry Gin combines the maltiness and hop aromas of the style with a decidedly more intense botanical infusion. The selection of botanicals for this gin was done with tradition in mind, but we also sought to capture the essence of our terroir with the inclusion of the iconic Oregon Marionberry and local hops. The result is a highly aromatic gin with the most compelling attributes of both genever and dry gin styles. We believe it speaks meaningfully to its Dutch heritage as well as its Oregon provenance.

Ransom Dry Gin begins with a base wort of malted barley and rye, which we mash and ferment at our distillery, and an infusion of botanicals in corn based spirits. We source the finest sustainably farmed botanicals in their natural form for the infusion. The gin is distilled using a direct fired alambic pot still in order to preserve the maximum amount of aromatics, flavor and body. Only the “heart of the hearts” (the very best portion of distillate) is retained for this bottling.

Tasting Notes: Ransom Dry Gin opens with ethereal aromatics of hops and white flowers, set off by bass notes from fresh marionberry and juniper berries. The palate is rich and silky, with malt flavors punctuated by citrus and exotic spice piquancy from cardamom and coriander. The gin finishes with suppleness and power, with the viscosity and richness of malt carrying clean, focused botanicals.

Ransom Old Tom Gin

RANSOM OLD TOM GIN

Description and Flavor Profile: This Old Tom Gin is a historically accurate revival of the predominant Gin in fashion during the mid 1800’s and the golden age of American cocktails. The recipe was developed in collaboration with historian, author, and mixologist extraordinaire David Wondrich. Old Tom is the Gin for mixing classic cocktails dating from the days before prohibition.

Its subtle maltiness is the result of using a base wort of malted barley, combined with an infusion of botanicals in high proof corn spirits. This fine gin is distilled through an alambic pot still in order to preserve the maximum amount of aromatics, flavor and body. Only the “heart of the hearts” (the very best portion of distillate) is retained for this special bottling.

A pioneering American craft spirit, Ransom Old Tom Gin was the first domestic barrel aged gin and the first domestic Old Tom Gin to be released since Prohibition.

Ransom WhipperSnapper Whiskey

RANSOM WHIPPERSNAPPER WHISKEY

Description and Flavor Profile: The WhipperSnapper is our endeavor to combine the best production methods and technical approaches used in making Bourbon, Scotch, Irish whiskey, and Dutch corenwyn. We believe the WhipperSnapper cannot be placed in one category of whiskey; the best aspects from several distinct styles are represented. Although the mash bill is most similar to bourbon, it is quite heavy on malted barley, and aromatically is more similar to a non-peated Scotch or Irish whiskey.

There are many definitions of what a WhipperSnapper is. We prefer the one that defines a WhipperSnapper as a young, impertinent person, lacking in respect for the elders, but who also has an excess of ambition and talent. So it is with our WhipperSnapper; this young whiskey is no sullen layabout. Unbound from the constraints of its cousins in traditional whiskey categories, we feel that it embodies a template for youthful and accessible yet expressive craft whiskey that gives credence to its ingredients and production methods.

Aging:: Aged in used French oak wine barrels as well as new and used American whiskey barrels. Average time in barrel eighteen to twenty-four months with a range from twelve months to five years.

Tasting Notes:WhipperSnapper opens with warm, toasty notes of hazelnut and rye loaf, underpinned by creamy malt aromas. The palate is lively but giving, with a deft balance between aromatics of grain and barrel; notes of crystal malt, demerara sugar, and sweet earth. WhipperSnapper finishes with an elegant flourish of viscosity and vibrant, expressive notes of rye and malt.

Ransom Henry DuYore's Rye Whiskey

RANSOM HENRY DUYORE'S RYE WHISKEY

Description and Flavor Profile: Henry DuYore’s Rye Whiskey speaks to our aspiration to release spirits that balance the character of their grains of origin with the influence of the years passed in oak barrels. An abiding fondness for the flavor of rye inspired us to produce our own bottling. With this Rye Whiskey, we sought to temper the admirable innate feistiness of rye with the rich, supple flavor of malted barley.

Rye proved to be a worthy adversary for the oldfashioned Ransom mashing system, which we originally designed for the more cooperative malted barley. The texture of the rye grain made it impossible to push our housemashed base wort above fifty percent rye, so we selected a well-made rye white dog to bring the rye to the forefront of our blend. We feel that the resulting whiskey retains the texture, aromatics, and flavor of an artisan pot distilled spirit.

We are proud to offer up this whiskey as a fitting tribute to the legendary old moonshiner Henry DuYore. Although he is now completely reformed Henry’s true identity cannot be revealed. You might find him in his cabin, whittling, reading classic literature, or enjoying the occasional nip of good whiskey…or you might even find him right around here.

Tasting Notes: Henry du Yore’s Rye Whiskey opens with heady cereal notes of pine sap, celery root, and sweet rye loaf, set off by warm accents of malted barley. The palate is forward and textured, with dark rye and demerara flavors punctuated by lively hints of fresh sugar cane and exotic high notes of hibiscus and agave. The whiskey continues with suppleness and power, with the richness of the malt carrying clean, focused aromatics on a long, elegant finish.

RANSOM RYE, BARLEY, WHEAT WHISKEY

Description and Flavor Profile: Innovation is a cornerstone of the American ethos, and innovators have always shied away from the impulse to equate tradition with convention. In this spirit, our Rye, Barley, Wheat Whiskey is carefully crafted using the finest traditions in distilling—It has been distilled in hand hammered, direct fire, alambic copper pot stills and only the very best portion of the cuts, the “heart of the hearts” has been kept at the still. We have, however, chosen to flaunt conventions of category with our decisions about the mash bill and barrel program.

Years of blending have convinced us that diverse mash bills produce whiskeys that are more evocative and interesting, so we worked diligently to craft a rich, complex palate of grain flavors by blending six grain components. To protect and enhance these delicate cereal flavors, we elected to forego the conventional heavily charred new oak in favor of used 60 gallon toasted French oak barrels, most of which formerly held Pinot Noir. These barrels contribute weight and depth to the spirit without erasing or obscuring the character of the grain, which we feel should define a premium whiskey.

The result is a whiskey which we feel offers unprecedented depth, complexity, and body. The finest ingredients, meticulous attention to fermentation, and obsessive distillation techniques come together to bring you this unique, innovative American Whiskey.

Tasting Notes: Rich aromatics of hazelnut shortbread and sugar cookie provide an approachable counterbalance to earthy spice notes from the rye. On the palate, a smooth entry with flavors of Amoroso sherry and brown butter continues to build in breadth and viscosity. The finish is lush and enduring, with sweet honey notes and a polished hint of baking spices.

Ransom The Emerald 1865 Whiskey

RANSOM THE EMERALD 1865 WHISKEY

Description and Flavor Profile: Thanks to colorful folklore passed down through the generations, we know that the whiskies of Ireland today little resemble their 19th century predecessors. Trouble was, there was none left of the traditional whiskey to taste in our quest to recreate the long lost gems of the Emerald Isle. Fortune gave us two good turns; a British excise agent who recorded an Irish mash bill in 1865, and our friend David Wondrich, who found said recipe poring over the microfiche annals of history and passed it along to us.

With this mash bill as our guide, we set out to create our own interpretation of whiskey as it would have been traditionally made in Ireland. To call our version modern might be a stretch— We grow a percentage of the barley organically on our farm, our grains are milled, mashed and fermented in small batches at our distillery and farm in the emerald hills of Sheridan, Oregon, and we distill according to our senses in our handmade, direct-fired alembic pot still. The Emerald matures in a mix of French and American oak for three years, and is hand-bottled, waxed, and labeled.

The result is a highly aromatic spirit with the weight, richness, and complexity of its forbearers. In seeking to recreate a whiskey of another time and place, we feel we have created a spirit which speaks meaningfully to its two provenances; Ireland of yore, and the green hills of Oregon where it has taken a foothold after 150 years of migration. Like so many flavors from our heritage, it truly brings the old country back to life.

Description and Flavor Profile: Ransom Sweet Vermouth harkens back to the flourishing cocktail culture of the Belle Époque, when joie de vivre filled the air and Vermouth made the evolutionary leap from charlatan snake oil and disguised refuse to a distinguished mainstay of the era’s most popular drinks—the Martinez, the Negroni, and across the pond, the Manhattan. As the classic cocktail revival encouraged us to bring such endangered spirits as Old Tom Gin back into production, we yearned to create an aperitif with the aromatic intricacy and grace to complement our spirits.

At Ransom, the production of Vermouth is the great bridge between our winemaking and distilling crafts. Beginning in the winery with small lots of aromatic white grapes, we carefully ferment and blend wines of elegance and character, employing traditional techniques to maximize varietal expression, such as fermenting Gewürztraminer on the skins, making botrytised Riesling, and employing carefully controlled oxidation of wine in barrel. Taking another cue from classic European vermouth houses, our solera system allows us to maintain the consistency and complexity of this unique base wine blend across vintages. In the distillery, we alambically distill and barrel age brandy from our house-made base wine for fortification. The Vermouth is then infused with a tantalizing blend of aromatic botanicals divined through five years of elaborate blending trials and spirited conversations about the character of test batches. It is sweetened to a bittersweet balance with a proprietary blend of Muscat grape juice, maple syrup, and Turbinado sugar and minimally filtered before bottling.

While ours is an original recipe with elements of whimsy, this Vermouth is fundamentally a classical formulation, rooted in flavors of wormwood and the quinate barks. It lends depth, complexity, and elegance to cocktails both classic and modern and is a worthy aperitif either neat or on ice. We believe our Vermouth retains the traditional apothecary signatures of its Belle Époque ancestors while contributing meaningfully to the modern Vermouth tradition. Bonne santé!

So began the era of Vermouth at Ransom.

The finish is long and balanced, evoking the sweet herbal scent of a Willamette Valley meadow in late summer.
