Description: In Latin, Procedo means to proceed; these Italian-inspired varietals are plantd by growers who hoose to look forward. This table red was crafted as a nod to those “super-tuscans” who chose to buck tradition and plant varietals not typical for their region. These trailblazers of tuscany risked everything. Including the regional DOC, in the interest of producing quality over quanity.

2014 was another warm vintage in Eastern Washington, creating rich, voluptuous wines with intense fruit character. You might expect a grippy tannin profile to match the vintage heat, but you would be mistaken. The lack of significant heat spikes and plenty of cool evenings kept the skins relatively thin and acids balanced. Lady Hill utilizes slow, cool fermentations that focus on fruit and create a solft plush mid-palate. This wine was barreled down in 100% French oak to optimize vineyard expression.

Flavor Profile: Aromas of red and black cherry, raspberry, and leather with hints of dried earth and tobacco leaf. The mouth is weighted and plush with flavors of black cherry and plum. The rich texture is balanced with fine, talc-like tannins that mingle with a vibrant, juicy acidity.

Pairing: This will be a great wine to pair with grilled flank steak, pasta bolognese, and seasoned poultry.

Description: There is no better place to get Barbera fruit than the first place the variety was planted in the Northwest Red Willow Vineyard. Legendary Washington grower Mike Sauer has worked with Barbera longer than anyone in the Northwest and knows the fruit intimately. His Red Willow Vineyard offers the kind of dry and warm growing conditions that are ideal for this Italian variety. Lady Hill is privileged to be able to craft a single-variety, single-vineyard bottling of this classic Piemonte grape.

Flavor Profile: Intense and inky deep magenta color. Deep aromas of rose and cherry blossoms have accents of molasses and brown sugar, with a touch of dried earth. The wine has a polished texture and is packed with brambly cherry, red rasberry fruitiness, with a vibrant rose high-note and echoing mint accents. Bright acidity gives zest to the core fruit, while complementary notes of red licorice, cocoa powder, and violets add depth and interest. There is a jaunty quality to this wine that is reinforced by the generous acidity and soft tannins, making it as easy to sip alone as it is to pair with food. The finish offers a lingering sense of minty aromatics and sour cherry pie filling.

Pairing: A great wine to pair with meats like a rare steak or pasta dishes like homemade lasagna.

Description: The fruit for this wine comes from the two westernmost vineyards in the Yakima Valley: Red Willow Vineyard, and Slide Mountain Vineyard. These meticulously farmed vineyards are in some of the coolest parts of the appellation and located a high elevations, so the fruit has extra vibrancy and varietal fidelity. At Red Willow, grower Mike Sauer provided all the Sangiovese and Merlot for this wine, while Bruce Morford’s Slide Mountain Vineyard contributed the Cabernet Franc and Cabernet Sauvignon.

Flavor Profile: The dusky red core is deep and dark, with intense purple rims. The nose is composed of an intriguing combination of high and low tones: there is a pleasing waft of tart red fruitiness overlaying a foundation of dark plum and herbs. On the palate fruit sweet tastes of red cherry and strawberry are bright, forward, and tinged with soft mint—as one might expect from the significant Sangiovese proportion. Yet there are also darker tones in the wine thanks to the Bordeaux grapes—dried thyme and rosemary, and additional blue plum characters. Though bright with acidity, there is a roundness to the wine’s body, and while there are noticeable tannins on the finish, they are finely-textured and well-integrated. The finish is ample and fruity. This is a striking wine with plenty of up-front fruit for satisfying
drinking today, but also the character to age well with cellaring.

Pairing: This will be a great wine to pair with grilled meats, hearty pastas and stews, or well-seasoned poultry dishes.

Flavor Profile: Rhône varieties do well in long warm growing days of Eastern Washington. Elaina Red has classic aromas of blackberry, with hints of white pepper, orange rind, and barrel spice. On the palate, this wine is juicy with layers of berry and floral notes with a soft velvety tannin structure.

Description: Ciel du Cheval Vineyard has been at the forefront of Red Mountain grape growing for over 40 years and has produced some of the greatest wines in the history of Washington state. With sedimentary soils of loam that are high in Calcium Carbonate, this hot box of day ripening has seen a resurgence in Rhone varietal plantings from the likes of Red Heaven Vineyard and Fore Majeurte.

The 2015 vintage in Eastern Washington would be described as the hottest to date, with over 1200 Growing Degree Days above the long-term average. These blistering conditions advanced every aspect of the growing season, with bud break, bloom, and harvest occuring three weeks ahead of historical records. We co-fermented and aged this vintage in once filled 600L French oak Demi-Muids to minimize oxidation yet maintain a rounded, subtle oak profile.

Flavor Profile: Flowery herbal tea, honey comb, and vanilla cream with tart green apple, citrus blossom and a hint of bosc pear. The rich creamy texture of warm climate Roussanne is cut like a razor with the vibrant acids of the Viognier. Due to the nature of the Roussane varietal and its acidic balance, anticipate this wine to oxidize and age into a leesy, nutty masterpiece of dried flowers, and tangerine rind. Drink this wine young (w/n the next 5 years).

Pairing: Try with rich shellfish such as scallops, crab, or lobster, and also root vegetables with butter.

Description: Mourvèdre is a Rhône grape that is quickly gaining in popularity thanks to its suave blue and black fruitiness and solid structure. When added with other traditional Rhône grapes, wonderful blends result. Our fruit for this wine comes from Red Heaven Vineyard, in the heart of Washington’s Red Mountain AVA, home to some of the most sought-after grapes in the Northwest. Specific vine rows are earmarked for Lady Hill, and we work closely with the vineyard manager to produce outstandng fruit for this single-vineyard blend.

Flavor Profile: Bright and lively cherry red color is matched in vivacity by forward aromas of plum, raspberry, cola, and dried basil. On the palate a supple texture delivers sweet and ripe flavors of cherry and plum fruits, with a jaunty overlay of sassafras. Definite cola accents give the wine additional depth, and a gentle earthy quality lends a savory note. There is a subtle sense of damp underbrush that appears toward the finish, almost like walking in a misty, mossy forest. The flavors are full and plump, but good acidity makes them feel bright on the tongue. The finish is lengthy and rich with lingering fruit tones.

Pairing: A delicious and complex wine perfect to pair with leg of lamb.

Description: Washington’s Red Willow Vineyard has been a pioneer in growing Rhône wine grape varieties, including the Syrah and Mourvèdre that went into this wine. This is the place where both of these great grapes were first planted in the region in the 1980s, by Mike and Karen Sauer who still tend the fruit. This distinctive site sits on soils more ancient than much of eastern Washington, and thanks to its high elevation and its locaton as the westernmst vineyard in the Yakima Valley, it is a generally cooler site than much of the region. These conditions give Red Willow fruit a distinctive character that we are pleased to capture in this single-variety, single-vineyard wine.

Flavor Profile: This wine has a vibrant red/purple color is bright and youthful. Cherry blossom and cassis are accented by rose and lavender notes, with hints of wet suede and fresh meat. It has a light and rich palate weight with layers of black fruit leather, sage, and myrrh. The flavors unfold within a delicately refined envelope as polished acids and silty tnnins The Syrah flavors lend plushness, plum, and other dark fruits. Black pepper, and a sense of roasted meat and cedar prevail. While the wine displays fruit, there is a noticeabe streak of acidity and minerality imparted by the Mourvedre that lends vivacity reminiscent of Northern Rhône blends. The finish is lengthy and generous in fruit and graphite. It leaves a veil of fluffy tannins. This wine was 14 months in 228 liter barrels, 36% new wood.

Pairing: A complex and satisfying blend that will pair marvelously with game, lamb, and duck.

Description: Oregon’s Willamette Valley was the first place outside of France where pinot gris vines were planted, by the region’s pioneering pinot-grape vigneron David Lett. The variety thrives in the cool, marine air-influenced climate and hillsides of Oregon’s most famous appellation. We source our pinot gris from selected vineyards throughout the region and from growers who specialize in this popular white variety.

Flavor Profile: Crystalline green-gold color is bright, and well complemented by bold scents of fresh lemon/lime fruit and white citrus blossoms. This is a dynamic and energetic pinot gris reminiscent of classic Alsatian versions, but with the overlay of lively Willamette Valley acidity. The flavors of ripe citrus are full, focused, and fairly dance on the palate thanks to the crisp freshness of the wine. Notes of slate and minerals are pronounced on the mid-palate, and light spice and dried grass accents add depth. The finish is long and resounding.

Pairing:This is a bold, zestful pinot gris that is a satisfying wine to pair with seafood, cheese and nuts, or to drink on its own on a warm summer day

Lady Hill Pinot Noir 2014

Description: Nestled in the Eola Hills just outside of Salem, OR, lies Eola Springs Vineyard, a 70-acre vineyard originally planted in 1972. Soils are sedimentary at lower elevations with transitions into volcanic and marine sediment in the upper terrace. 2014 Was a record breaker for degree days in Oregon with the vineyard awakening 3-4 weeks ahead of average and very few late season rains to force the winemaker into an early pick. An easy spring to summer transition and bountiful fruit set produced plenty of canopy and clusters to soak up the summer sun, and both quantity and quality speak to that. Optimal ripening, gentle handling, cool extended ferments balanced with sur lee aging and a subtle hand in new oak, showcases a dark, concentrated Pinot Noir with both roundness and structure to match.

Flavor Profile: The color supports classic Eola-Hills AVA deep garnet to red plum. Aromatics are dark and ripe, featuring blackberries, marionberries, and plum. Brambled dark fruit flavors are a compliment to the subtle vanilla and oak. The entry of this wine is luxurious and weighty, balanced with a juicy, lifted complexity of tart red berries. The finish lingers, highlighted by acidity that will pair with a wide range of cuisine. Consumed with ease at an early age, this wine will continue its development in bottle through 2020.

Pairing: Pair with fennel and garlic pork roast, wild mushroom bruschetta, or roated butternut squash soup.

Description: Red Willow is one of the Northwest’s most prestigious vineyards. Located along the western boundary of the Yakima Valley AVA, its high elevation is above the Missoula Flood line and so contains ancient soils, unusual for eastern Washington. Owner and grower Mike Sauer was the first in the Northwest to plant many grape varieties that Washington is now known for. 2014 was another warm vintage in Eastern Washington, creating rich, voluptuous wines with intense fruit character.

Lady Hill utilizes slow, cool fermentations that focus on fruit and create a soft plush mid-palate. This wine was barreled down in 61% new French oak for 24 months. Lees contact and minimal handling through the aging process produce a rounded, creamy mid-palate and balanced structure.

Flavor Profile: Blue and black fruits, tea leaf, tobacco, and sweet barrel spice begin this Cabernet, with an entry of the flavors of dried herbs, bayleaf and black raspberry that lead into a savory, herbal finish of autumn leaves. Well structured barrel tannins and soft acidity create a drying finish. Barrel aged for 24 months in 61% New French Oak.

Pairing: Serve with lamb kabobs, grilled salmon with porcini mushrooms, or smoked ham.

Description: Merlot has long been considered one of the great grapes of Eastern Washington, ripening beautifully in the warm climate and producing profound wines. Lady Hill is proud to work with Red Willow and Slide Mountain Vineyards for this merlot. Both these sites are at the extreme western edge of the Yakima Valley, at high elevations. This gives them both ancient soils, undisturbed by the Missoula Floods, and cooler growing temperatures for longer, more even ripening of the merlot grapes.

Flavor Profile: Evenly hued, and vermillion in color, this wine has aromas of ripe plum and currant fruits with a fresh cut alfalfa aspect in the background. On the palate the wine offers a juicy wash of dark and plummy fruit flavors that include black cherry and sassafras. Additional layers of espresso, fresh garden soil, and cola add multiple dimensions to the wine. Ample acidity and the tannin structure gives firm boundaries to the fruit. The finish maintains a long fruity presence, with a hint of garden herbs and fine-grained tannins as the wine fades.

Pairing: This is a firm and tasty merlot that will pair well with pork in a prune sauce.

Lady Hill Cabernet Sauvignon 2013

Description: Red Willow Vineyard, located at the western boundary of the Yakima Valley AVA, and long recognized for the character and quality of its Bordeaux-style grapes, comprises 56% of this Cabernet Sauvignon. The remaining 44% was sourced from Slide Mountain Vineyard, also in the western reaches of of the Yakima Valley. This small (16.5 acres) site is located above the Missoula Flood line and produces intense, balanced, and complex fruit.

Flavor Profile: Velvety, dark maroon in color. Features a large core of macerated plum, blueberry, and blackberry fruit, lined with subtle and savory mint and tobacco notes. The mid palate is rich and firm with a vein of natural acidity that pushes the sticky tannins to the gums and lips. Anise, milk chocolate, and malt persist on the finish.

Description: The 25-acre Tapteil Vineyard was planted in 1985 on Washington’s Red Mountain, perhaps the most prestigious AVA in the Northwest for cabernet sauvignon and merlot grapes. Owner/grower Larry Pearson applies his 38 years of farming experience to produce remarkably intense and balanced fruit from the silty loam soils of his very warm and dry site. Lady Hill is proud to craft wines from Tapteil Vineyard.

Named after the admirable pioneer woman Marie Dorion, who was an early explorer and leader in the Champoeg area of the Willamette Valley, our Cuvée Marie Dorion is part of Lady Hill’s Pioneer Series—wines that honor the spirit of the True Northwest.

Flavor Profile: Rich and fruity scents of crushed red and black fruit rise warmly from the glass. Notes of barrel spice, cinnamon, and toast add savory accents on the nose, but as the wine opens more floral tones of violets and lavender can be detected. On the palate big cassis and red plum flavors are immediate and forward, with a plush juiciness. The core fruit is complex, with herbal notes wrapping around an essential fruit sweetness. Good acidity adds a frame to the fruit, so that it is never blowsy or overblown. Fine tannins add a welcome backbone. Still young, this well-balanced blend offers great promise for further development.

Pairing:Fantastic with a rare to medium-rare grilled sirloin steak.

Named after the first European farmer in the Willamette Valley, Étienne Lucier, this beautiful blend is part of Lady Hill’s Pioneer Series—wines that honor the spirit of the True Northwest.

Flavor Profile: Robust earthy red color leads to a wafting nose of rose blossom scents and ripe blackberry aromas, tinged with a tarragon herbal edge. There are toasty notes of barrel char and a whiff of chocolate that emerge with time in the glass. On the tongue the wine offers a dense mélange of fruity flavors: plums, blackberries, and a cranberry-like tartness that gives a sense of verve to the mid-palate. The texture is supple and velvety, while the flavors are smooth and remarkably integrated for such a young wine. Plenty of natural acidity makes for a lively mouthful, while just enough tannins keeps everything bounded in a well-structured frame. Even though this is surprisingly drinkable now, it will mature well in a good cellar.

Additional accents of bay laurel, ground coffee, and unsweetened chocolate give the wine multiple angles of flavor. The acidity is freshening and plush tannins add to the sense of substance, yet notes of sweet wood and minty herbs imparts a lighter character.

Pairing: Though still young, this wine delivers unusual complexity for its youth, and would well complement slow-cooked Texas-style brisket or Kansas-style barbecued pork ribs.

Flavor Profile: Dark, well-saturated purple-black color. The intriguing nose offers an appetizing combination of wild cherry fruit tones and accents of bacon fat and molasses. In the mouth the wine delivers tangy sweet tastes of cherries, currants, and red plums, all with an appealing wild and brambly aspect. In the background lurk notes of fig, sweet spices, and blackstrap. The acidity is fresh and the tannins are soft. The wine finishes with a lively fruitiness.

In some cases these are legendary vineyards, in other cases they are more akin to undiscovered gems. A variety of fruit sources went into this wine, including a portion of the blend coming from Red Willow Vineyard, the westernmost vineyard in the Yakima Valley AVA, established in 1973.

Flavor Profile: The dark maroon center of this wine is lightened by rose-colored rims. Satisfying aromas of crushed red fruits are surrounded by notes of autumndried garden leaves, dusty soil, and floral potpourri. In the mouth the supple texture carries forward flavors of currant and pomegranate fruit, backed by notes of plum jam, dried herbs, and red licorice. There is excellent concentration of flavor, pliable tannins, and good acidity.

Pairing: More than a simple sipper, this is a layered wine that is superb on its own, but will also pair well with roast beef, T-bone steak, or chili.

Description: Lady Hill works closely with a small number of selected Willamette Valley vineyards who farm cool climate pinot noir vineyards with exceptional care. In some cases, these are legendary vineyards, in other cases, they are more akin to undiscovered gems. Both such vineyards represented in this wine are sourced from the Dundee Hills AVA.

Flavor Profile: Medium-hued, rich garnet color with salmon edges is the first thing to note with this wine. Aromas are full of red berry fruitiness complemented by hints of baking spice, sandlewood and a foundation of freshly turned humus. Flavors of raspberries and tart cherry dance gracefully on the palate, with mouthwatering acidity. There are accents of red current and graphite in the background, highlighte tones that give the wine lift. This wine aged for 10 months in 20% new French Oak Barrels and Puncheons..

FONS AMORIS CABERNET FRANC 2012

Description: Slide Mountain Vineyard is a small, family-farmed vineyard in the extreme eastern part of Yakima Valley at a high eleveation that, we believe, makes it an exceptional source for fruit—and especially cabernet franc. This vineyard site is located above the ancient Missoula Flood line and so is planted on unusually ancient soils for the Columbia Valley. These soils are extremely dry and silty, but they also contain more minerals than many lower-elevation sites. Also because of its elevation it is a cooler than average site, allowing the cabernet franc a long and even ripening cycle. The result is fruit of distinctive character.

In this wine we have a superb expression of true terroir. This unique vineyard is able to ripen cabernet franc that delivers both elegance and concentration, which is not always found in this Bordeaux varietal. The 2012 vintage is widely thought to be one of the best in Washington because of its even warmth. And consulting winemaker Erik Brasher has extraordinary experience working with this vineyard, including having made exceptionally high-scoring cabernet franc wines from Slide Mountain.

Flavor Profile: Fully saturated purple black color with fucshia rims. Aromas of crushed red fruits mingle with spicy notes of clove, toast, and fresh-brewed coffee. There is a sweet overlay of rose blossom and dried potpourri giving the wine an appeling floral character. In the mouth the wine carries a silky texture with dense and juicy flavors of ripe plum, blackberry, and a touch of blueberry. A gentle herbal background adds notes of dried basil, and a sense of crumpled autumn leaves adds a savory accent. The wine is mouth-filling yet has a delicate quality—the proverbial iron fist in a velvet glove. Wonderfully balanced, the tannins are soft, the acidity bright, and the fruit deliciously ripe.

Description: Freedom Hill Vineyard, located in the Coast Range foothills in the western end of Oregon’s Willamette Valley, is considered one of the New World’s most eminent Pinot Noir vineyards. The vineyard was planted in 1980 on 106 acres of sedimentary soils and is primarily planted to Pinot Noir. Freedom Hill benefits during the day from warm air rising from the valley floor and cool evening and night air flowing in from the coast.
