STONE VALLEY CHARDONNAY 2016

Description and Flavor Profile: The 2016 Stone Valley Chardonnay is light to medium-bodied with a pleasing crispness that is balanced with good acidity. The preservation of the acidity and fresh fruit flavors were the primary areas of focus throughout the winemaking process. Freshness in this Chardonnay prevails with a crisp elegant finish. This Chardonnay offers citrus and apple-pear flavors.

The Process: Harvest occurred in the pre-dawn hours of the morning and then with swift immediacy the grapes were transported in their whole and uncrushed form to the Diemme tank press. After cold stabilization, the juice was fermented in stainless steel tanks cooled to 55º – 58ºF.

Pairing: Delightful as a aperitif or when seved with shellfish, white flesh fish, chicken dishes and a variety of salads.

Stone Valley Merlot 2016

STONE VALLEY MERLOT 2016

Description and Flavor Profile: This Merlot has pleasant violet and dark fruit aromas that lead to lush, abundant dark plum and black cherry flavors with just a hint of green olive character. Mouth filling yet smooth, the balance in this wine is apparent. Stone Valley Merlot is an unpretentious wine that can pair with many styles of cuisine.

The Process: The 2016 Stone Valley Merlot was produced from a blend of grape lots sourced from select Northern California vineyards. Fully mature grapes were gently crushed and fermented in our rotary fermenters. This process moderates fermentation temperatures and allows for full color extraction and maximum flavor development without using excessive heat or giving harsh tannin qualities. The final blend included Malbec, which further leans to bright fruit character in this wine. After fermentation the wine spent two months in French Oak.

Pairing: Excellent with many cuisines, but in particular pasta in tomato sauces, barbecued pork, chicken scaloppini, veal parmesan and an assortment of artisan cheeses.

Varietal: 90% Merlot, 5% Cabernet Franc, 5% Ruby Cab

Stone Valley Cabernet Sauvignon 2016

STONE VALLEY CABERNET SAUVIGNON 2016

Description and Flavor Profile: Structure and fruit are what this wine is about. The full mature, but soft Cabernet Sauvignon tannins are rounded out and balanced by the subtle spice and a lovely smokey note with intense dark fruit flavors.

The Process: The 2016 Stone Valley Cabernet Sauvignon was produced from a blend of grape lots sourced from select Northern California vineyards in the Sloughouse, Clements Hills and Mokelumne River sub-appellations of Lodi. Fully mature grapes were gently crushed and fermented in our ‘Australian designed’ rotary fermenters. This process moderates fermentation temperatures and allows for full color extraction and maximum flavor development, without excessive heat or harsh tannin qualities. The wine then spent four months in French oak.

Pairing: Serve with big bold foods such as grilled meats, spicy stews and pasta dishes; it is also excellent with rich cheeses and chocolates.

Stone Valley Red Blend 2016

STONE VALLEY RED BLEND 2016

Description and Flavor Profile: This Red Blend has vibrant dark red and purple color, followed by aromas and flavors of dark berries, mocha and spice. The finish is rich and flavorful.

The Process: The 2016 Stone Valley Red Blend was produced from a blend of grape lots sourced from select Northern California vineyards. Fully mature grapes were gently crushed and fermented in our rotary fermenters. This process moderates fermentation temperatures and allows for full color extraction and maximum flavor development without using excessive heat or giving harsh tannin qualities. The final blend included Zinfandel, Merlot and Petite Sirah which gives the wine a spicy, juicy and rich character. After fermentation the wine spent two months in French Oak.

Pairing: Excellent with many cuisines, especially a hearty steak, grilled venison, duck ragout and strong cheeses or a rich chocolate dessert.

Varietal: 60% Zinfandel, 30% Merlot, 10% Petite Sirah
