ACROBAT PINOT GRIS 2015

Description and Flavor Profile: This 2015 vintage is a brilliant example of Pinot Gris from a consistent and warmer than average Western Oregon growing season. 2015 was the earliest harvest in King Estate history due to a dry, mild winter, minimal frost, and the wam temperatures of sping and summer. Visually, this Pinot Cris has a glistening straw yellow color. A complex nose of lemon, pineapple and Key lime pie is accented by firm notes of vanilla custard and jasmine. Bright flavors of fresh lime, lemon zest and green mango are immediately apparent, with riper fruit flavors of pear and guava lingering in the mid-palate. There is an effortless balance of acidity, minerality and fresh fruit flavors that make this wine easy to return to. Expect this wine to age beautifully through the next decade.

The Process: The 2015 vintage was fermented in 100% stainless steel tanks, which were temperature controlled tanks, to maximize fruit character. This wine benefited from sue lie aging for 3 months prior to bottling.

Pairing: Goes great with vegetarian, seafood and meat dishes. Try with pesto dishes, grilled zucchini, Fettuccini Alfredo, salmon (smoked, grilled), scallops, mussels, seafood pastas, lighter fish dishes, braised rabbit in Acrobat Pinot Gris, chicken kabobs, chicken and mushrooms in a garlic white wine sauce, chicken salad, etc.

The 2015 Acrobat Pinot Noir has a smooth start filled with ripe fruit. The middle fills in with a nice weight and depth. As the wine continues, the fruit mingles with earth and oak while the acid and integrated tannins provide a lengthy finish.

The Process: Destemmed, cold soaked, punched down, and pumped over, the 2015 Pinot Noir underwent malolactic fermentation before being aged 6 months in French oak.

Pairing: You can pair a wide variety of dishes with this extremely versatile Pinot Noir, from a delicate, poached salmon to a rich, braised duck breast. We recommend leaner meats (veal, chicken, turkey, rabbit, any game bird, filets of beef or pork, and a well-drained duck). Smoked, wood-roasted, braised or sausage meats (with the use of beef, lamb and pork). Earthy flavors (truffles, wild mushrooms, mustards, peppercorns, coriander and horseradish). Resin-like or scented green herbs (rosemary, thyme, tarragon, oregano, summer and winter savory, chervil, mints and basils). Aromatic sweet spices (clove, cinnamon, mace, allspice and nutmeg). Sweet vegetables (tomatoes, beets, carrots, caramelized onions and bell peppers). Autumnal fruits (figs, plums, blackberry, raspberry, blueberry, currants, and black and dried cherries). As the wine continues, tropical fruits and citrus mingle with a fresh minerality to deliver a lengthy finish.

The Process: The Pinot Noir grapes for our 2015 Rosé were cold soaked for 72 hours before being saignée and pressed. The wine was fermented in 100% stainless steel, temperature controlled tanks with cultured yeasts. Aging took place over two months in stainless steel.

Pairing: This is the ultimate summer drink; a must have with picnics and the food that goes with picnics. Try with cold cuts, ham salad, grilled chicken, smoked salmon, or grilled tuna. Also delightful with a classic Bruschetta, or try it with a potato salad with lots of bacon. Try it also with watermelon, feta and mint (so good!). There are many options for this delightful Rosé. Made with the best selection of grapes each year, the 2015 vintage was sourced primarily from King Estate’s certified organic and Biodynamic vineyard as well as a handful of like-minded sustainably-farmed vineyards throughout the Willamette Valley.

The 2015 vintage is a brilliant example of Pinot Gris from a consistent and warmer than average Willamette Valley growing season. This wine has a glistening straw yellow color. The nose bursts with fruit flavors like ripe pear, pineapple and key lime pie with subtle aromas of damp slate and violets. The palate provides a seamless balance of ripe fruit and acidity – an outstanding mouthfeel. Flavors of honeydew, pear, wild honey and lime zest are framed by mineral notes. The finish is clean, long and generous. This wine will age beautifully through the next decade.

The Process: 2015 was the earliest harvest in King Estate history. A dry, mild winter led to early bud break in mid to late March, about two weeks ahead of normal. With minimal frost damage to worry about during winter, there was an abundance of fruit set by early June. Warm temperatures throughout spring and summer kept the vines ahead of their seasonal average maturation while a slight reprieve from the heat arrived around harvest and helped to preserve acidity and allowed for optimal flavor development. Fruit came in perfectly ripe having benefited from extended hang time.

The 2015 vintage was fermented in 100% stainless steel tanks, which were temperature controlled to maximize fruit character. This wine benefited from sur lie aging for 4 months prior to bottling.

King Estate Pinot Noir 2015

KING ESTATE PINOT NOIR 2015

Description and Flavor Profile: 2015 King Estate Willamette Valley Pinot Noir has a deep garnet color with bright crimson tinges. The nose has aromas of ripe black cherry, plum and licorice. The palate has dark fruit flavors, like blackberry and black cherry, with a subtle clove finish. This is full, supple and complex, coming together nicely with softened tannins and pleasant acidity. Enjoy now through at least 2030.

The Process: These 100% Pinot Noir grapes are meticulously hand-sorted before being de-stemmed. Stainless steel fermentation with daily punch downs and pump overs is followed by malolactic fermentation. These distinct vineyards lots are barrel-aged for 8-10 months in French oak barrels before we make the final blend. This blending approach allows our winemaking team to create a wine that best exemplifies the site-signature and style of Willamette Valley Pinot Noir.

Pairing: Excellent with duck, grilled pork chops, Smoked, wood-roasted, braised or sausage meats (with the use of beef, lamb and pork). The 2015 vintage is a brilliant example of Pinot Gris from a consistent and warmer than average Willamette Valley growing season. This wine has a brilliant straw yellow color. Aromas of honeysuckle, Bartlett pear and pineapple are framed by delicate notes of mineral, rose petal and lemon zest. A supple wine from the start, the palate exudes flavors of fresh cut pear, pineapple and key lime. There is a striking balance of ripe fruit and fresh acidity that provides a lengthy clean finish. This wine will age beautifully through the next decade.

Description and Flavor Profile: Made exclusively with certified organic grown grapes from our estate vineyard, each vintage of Domaine Collection reflects King Estate’s unique terroir and is a true testament to our dedication to quality and sustainability. Our Domaine Pinot Noir is made from a combination of clones, primarily 113 and 115, grown in exclusively Bellpine soil. Only the most superb estate grown grapes are hand selected for blending in the Domaine Collection. The 2013 vintage leads with rich notes of red fruits like cherry, strawberry and cranberry and develops into richer flavors of cigar box and leather. This is elegant and sensuous at its core and framed by a deft balance of acidity and oak. Enjoy now through 2023./p>

The Process: Fruit for 2013 Domaine Pinot Noir was hand harvested from our estate vineyard and then hand sorted before being destemmed. Fermentation took place in temperature controlled, open top, stainless steel tanks. This wine benefited from 18 months aging in 50% new French oak barrels prior to bottling.

Pairing: Try with roasted duck and most any mushroom dish. Excellent with grilled pork chops. For cheese: Gruyére, smokey blue cheese, aged Gouda, or a young Cantal.

NORTH BY NORTHWEST RIESLING 2014

Description and Flavor Profile: The home of some of Washington’s most acclaimed vineyards, Horse Heaven Hills sits between 220- 1,800 feet in elevation. While sparsely populated, HHH boasts over 12,000 acres of vineyards and is one of the state’s premier terroirs for growing Riesling and Chardonnay famous for its bright personality, bracing minerality and lively acidity. The 2014 Riesling has a refreshing acidity upon entry coupled with a mellow sweetness that leads into a supple wine in the mid palate. Notes of lime and rose petal punctuate this dry style wine with a layered and lingering finish.

The Process: Handpicked and whole cluster pressed, the 2014 Riesling was allowed to cold settle before being racked, slowly fermented and cold stabilized. 4 months sur lie aging took place prior to bottling.

Pairing: Great with Asian cuisines (Thai, Vietnamese. Indian curries). Grilled pork and chicken. Cheese (asiago, cheddar, gorgonzola, gouda, gruyére). Charcuterie. Chicken and seafood enchiladas. Shellfish. Veal.

North by Northwest Chardonnay 2014

NORTH BY NORTHWEST CHARDONNAY 2014

Description and Flavor Profile: With over 500 acres planted to Chardonnay, Syrah, Merlot, and Cabernet, Soaring Eagle Vineyard is located in the Wahluke Slope AVA at 600-750 ft. in elevation. Hot and dry with a long growing season, Soaring Eagle is in one of the warmest Washington AVA’s. Planted on Burbank loamy fine sand, the site is known for producing ripe, luscious wines with high flavor intensity.

The 2014 Chardonnay carries flavors of melon and apple in its medium bodied entrance before rounding out into a balanced and smooth wine.

The Process: Fruit was handpicked, whole cluster pressed, cold settled, racked, and slow fermented. It then benefited from 5 months sur lie aging in 20% new French oak.

Pairing: Try dishes like eggs benedict, or even a steak béarnaise. Fine rich fish such as turbot, grilled veal chops with mushrooms, Late summer vegetables such as red peppers, corn, butternut squash and pumpkin (pumpkin ravioli goes very well with this Chardonnay). Cheddar cheese. You can even drink this Chardonnay with seared foie gras.

NORTH BY NORTHWEST ROSE 2016

Description and Flavor Profile: The North by Northwest Rosé comes from the finest vineyards in the Columbia Valley and Walla Walla Valley AVA’s, whih straddle the border of Washington and Oregon. The 2016 harvest yields exceeded projections, even with extra thinning, because clusters were heavy with fat, juicy berries. The year started off unusually warm, putting bud break and bloom a couple of weeks ahead of normal. In June, though, temperatures dropped to more typical levels and stayed cool throught harvets, giving the fruit time to ripen slowly. The result is a vintage notable for beautiful color, great structure, good natural acidity and full flavor development.

2016 North by Northwest Columbia Valley Rose has a pretty light pink color with salmon-orange hues. There is fresh citrus and key lime pie on the nose with rose water and passion fruit tinges. The palate echoes the nose with fresh lemon zest, ripe white peach, pineapple and grapefruit. These flavors are anchored by a laser-focused acidity that narrows the fresh fruit flavors in a sharp and pleasant finish.

The Process: After a thorough hand sorting process, fruit selected for the 2016 vintage was fermented in 100% stainless steel tanks, which ere temperature controlled to maximize fruit character. This wine benefited from sur lie aging for three months prior to bottling.

Pairing: This is the ultimate summer drink; a must have with picnics and the food that goes with picnics. Try with cold cuts, ham salad, grilled chicken, smoked salmon, or grilled tuna. Description and Flavor Profile: The Columbia Valley was Wasington’s first AVA and it is still the largest. Washington’s wine county is blessed with a terroir of abundant sunshine. Sharing the same 46º latitude as Burgundy and Bordeaux, the combination of Washington’s warm days, crisp cool evenings and well-draining, sandy soils yield grapes with a perfect ripeness and acidity critical for the crafting of world-class wine. This idyllic terroir allows the region to produce wines that are both fruit forward and structured.

The 2013 vintage marks our third bottling of the Red Blend, a wine previously only available on tap. A delightfully round entry leads into a wine perfectly balanced between earth and fruit. Pleasant, crisp tannins and juicy acidity make this wine delightful on its own or with a meal.

The Process: Fruit for the 2013 Red Blend was cold soaked, punched down and pumped over. The wine then underwent delestage and an extended maceration process before benefiting from 10 months in French and American oak.

Pairing: This wine pairs so well with so many things! Try it with shepard’s pie, roasted pork loin, grilled steak, veal parmesan, hamburgers, roasted chicken with vegetables, etc. etc. Most pairings will work with this extremely versatile wine.

After a rich entrance, fruit and earth blend seamlessly through a lingering finish.

The Process: Fruit for the 2013 Columbia Valley Cabernet Sauvignon was cold soaked, punched down and pumped over. The wine then underwent delestage and an extended maceration process. This Cabernet Sauvignon benefited from 18 months in French and American oak.

Pairing: The ultimate dish to pair with this cabernet is lamb, but it goes well with almost any meat like beef, pork, venison, even rabbit. Also try it with Blue cheese, Camembert, toasted cashews. Fantastic with a dark chocolate torte.

Description and Flavor Profile: Our Walla Walla Cabernet Sauvignon, produced with grapes from Les Collines and Seven Hills Vineyards, possesses ample, muscular tannins that balance well with the rich, soft fruits and earth tones, making it an elegant wine for any palate to appreciate. Rich and rounded, the 2011 vintage Cabernet Sauvignon shows aromas of black fruit, spices, and cedar in an enticing and complex nose. The well integrated tannins of this robust wine take you seamlessly from start to finish.

The Process: Fermentation techniques for the 2011 NxNW Walla Walla Cabernet Sauvignon included cold soaking, punch downs, pump overs, extended maceration, and Delestage. Aging took place over 22 months in French and American oak.

Pairing: Fantastic with grilled beef and lamb. Wild boar and other game dishes go excellent as well. Also roasted eggplant, rack of lamb, and short ribs. Dark chocolate is another obvious choice with this wine.
